Cassava Flour Pumpkin Muffins


  • 1 cup cassava flour (Otto's brand is the best)
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup canned pumpkin
  • 1 egg
  • ¼ cup pure maple syrup
  • ¼ cup of coconut oil
  • 3 tablespoons water
  • Lily's chocolate chips (optional)


  1. Preheat the oven to 400 degrees F.
  2. Combined all dry ingredients into a large bowl and mix.
  3. Combined all wet ingredients into a small, separate bowl and mix.
  4. Slowly add the wet ingredients into the large bowl and mix with the dry ingredients. Mix until it's thoroughly combined.
  5. Spoon batter into muffin tin.
  6. Bake for 18 to 20 minutes.
